Fermentation: Whole-bunch pressed to oak barrels.

Barrel Maturation: Only eight 300L French oak barrels were
50% new and 50% second-fill French oak
barrels were used.
Ageing: The wine is barrel matured for 11 months.
The aromas on the nose whisper the incredible complexity of this wine, with dried coconut, nutmeg, and ripe oranges prominent. Upfront on the palate is a pleasing wet stone-like minerality and a crisp, bright acidity. The bright acidity carries through to the finish leaving a lingering tingling sensation. Golden apples and ripe pineapples are prominent on the mid-palate with a refreshing kiwi fruit top note. On the finish, lovely aromas of orange blossom and sweet spice linger.
Dishes with an extra degree of richness like eggs benedict and steak béarnaise. It also works well with grilled fish and vegetables such as mushrooms,
corn, red peppers, and leeks.
