Our Story

Lume was founded by restaurateur Marco de Matos with a simple idea: modern fine dining can return to its elemental origins.

Drawing on classical technique and open-fire traditions, Marco created a space where flame becomes both a tool and a storyteller. Carefully sourced produce is transformed through heat and patience into dishes defined by depth, texture, and clarity of flavour.

Inspired by the landscape of the Paarl Winelands, the menu celebrates seasonal ingredients prepared over open flame. Each plate reflects a balance between refined technique and natural simplicity.

Marco de Matos

Marco de Matos is a restaurateur driven by a passion for hospitality, flavour, and the creation of spaces where people gather around exceptional food.

Throughout his career, Marco has contributed to several respected dining establishments, including the acclaimed Baia Seafood Restaurant, where he played an important role in maintaining its reputation for outstanding dining experiences.

His journey in the Paarl Winelands also includes El Picoteo, the alfresco tapas concept at Rhebokskloof that celebrates relaxed shared meals and familiar flavours.

With Lume, Marco presents a refined expression of his vision. Inspired by the surrounding landscape, the restaurant returns to the elemental power of fire, creating a dining experience where craftsmanship and seasonality exist in harmony.

Head Chef

Lance Peters

With more than 23 years of culinary experience, Head Chef Lance Peters has built a career defined by passion, precision, and creativity.

Beginning at the foundation of the kitchen brigade, Lance refined his craft through discipline, long hours, and an unwavering pursuit of excellence. Opportunities to work locally and internationally broadened his technical expertise and exposed him to diverse culinary traditions.

These experiences shaped a style that balances classical technique with contemporary innovation.

At Lume, Chef Lance brings decades of experience to every plate, combining creativity, leadership, and a deep respect for ingredients.
